I come across a LOT of recipes each week, many of which end up on my Pinterest boards. I also post recipes and nutrition tips on the Body First Pinterest page. If you’re on Pinterest, or any social media really, I’m betting you come across quite a few recipes or other nutrition “tips” as well. While some of these can be really helpful, the information overload can also be overwhelming. My goal is to shine the spotlight on some of the healthiest, easiest recipes to add to your weekly meal plan – hence the name of this post! I’ll occasionally add in a nutrition or health article if I think it is well written and clears up a common myth.

Here’s the spotlight for the recipes I’ve come across lately!

Baked Shrimp with Tomatoes and Feta

Vietnamese Chicken and Avocado Spring Roll Salad

Cheesy Black Bean and Quinoa Taco Bake

Crock Pot Green Chicken Curry

Roasted Carrot Fries

Vegetable Lasagna Soup

Blueberry Vanilla Greek Yogurt Granola Bars

Crispy Baked Sweet Potato Fries

Stay tuned for part 2 of the “cost of healthy eating ” series – up next is a look inside the grocery cart of a registered dietitian!
